Join Chef Hannah Wong as she shares how to use and create delicious recipes with gluten-free flours such as potato starch, rice flour, and glutinous rice flour (aka sweet rice flour). Hannah will give a quick overview on the functions and properties of each and focus on preparing different Asian dishes utilizing these ingredients. Students will have the opportunity to be hands-on in preparing and cooking ingredients, learn new techniques to diversify their home-cooking skillset, and enjoy a bountiful lunch together to celebrate their hard work. We hope to see you in our Hudson Valley/Berkshires kitchen for this hands-on class with Hannah. Menu to include: Bánh xèo - Vietnamese turmeric rice pancakes with shrimp, pickles, lettuce and herbs (non-shellfish option available) Homemade Korean rice cakes - prepared cacio e pepe style Vegetable tempura - assorted winter vegetables lightly fried This hands-on workshop, plus lunch, is limited to ten people. About Hannah Wong: A graduate of Williams College and a Fulbright scholar, Hannah Wong began cooking professionally in 2012 after working in academic publishing. She has worked at renowned restaurants including Daniel Boulud’s db Bistro moderne, Gramercy Tavern, and Battersby, while also doing stints in private events and catering (and winning Chopped on the Food Network!). After helping restaurateur Yen Ngo open Van Ða , a modern Vietnamese restaurant in the East Village, Hannah moved to upstate New York in 2021 to serve as the opening executive chef of The Aviary and Morningbird . Michigan is known for it's beautiful lakes and large sandy dunes. Beach glass is created when turbulent waves combine with course sand to create a natural rock tumbling effect. The resulting product is a mixture of wonderfully polished glass, soft stones, and colorful shells - all items we will be utilizing to create an eye-catching beach glass wall hanging that is the perfect addition to any Michigander's home. $60 includes step by step instructions, frame, beach glass, and all other necessary materials. Overnight Camp for Young Men 9-13 Grow stronger in body, mind, and character. Develop a sense of purpose , capability, and the confidence to serve others. The Junior Foundation Training camp combines physical fitness, bushcraft skills, and character development in a series of lessons and challenges designed to establish a strong foundation for healthy boyhood. This camp invites young men ages 9-13 to become more capable and confident and to use those attributes in service of those around them. Campers will: Engage in dynamic field fitness challenges Learn to build fires Learn to read topographical maps, measure distance, and navigate with a compass. Assist in cooking field meals with staff Practice terrain association and cross-country movement.
