"From the moment the Domaine reveals itself from the road you feel chilled and ready to relax. The hosts are super accommodating and let you find your best place, with the charming rustic restaurant and living spaces they have created, we could ask for nothing more. For those who might look for more than lounging on the splendid terrasse, shaded under the magnificent mulberry trees, the estate offers walks and time with horses, donkeys and wildlife, including the chance to ride or interact with the horses at the equestrian centre. All this and they are located a short drive south of Carcassonne and they can even arrange golf at local courses. How lucky we were to discover the Domaine de Fraisse. Our only regret was not staying longer."

"Le Patio des Senteurs is magical. A beautiful building, warm hospitality from Lotte, delicious breakfast, even a cute little pool which our two children loved. Excellent value for money. So many thoughtful details, including cold water, a glass of wine, Orangina for the kids and snacks available in the breakfast room. The decor is tasteful and romantic, even the bed linen and napkins were great quality. It was hot (37 degrees) but the building stayed cool and we all slept incredibly well. And the location is great - only an hour from Toulouse, close to Carcasonne and Limoux. We wish we could have stayed longer and will definitely be back!"

"We were given room 4 on the 2nd floor. There is a large balcony, with dining table for 2 on one side and comfortable chairs on the other side, overlooking lush greenery. Very private yet you can feel the cold morning breeze. The bed was very comfortable with sockets beside the bed- a plus! The shower and lavatory is covered by a black sheath curtain- shower pressure was strong. Shampoo conditioner and liquid soap were heavenly. Free coffee capsules, and some treats from the refrigerator like olives etc. There was a welcome treat of delicious blackberries, breadsticks and some Apricot pastry- everything was delicious. There was also an evening treat of chocolate waffle - also very delicious. Free coffee capsules. Breakfast is a MUST! You won’t be disappointed. It’s just very good and so much. The sheep yogurt and blueberry yogurt were very good. Service was impressive, our waitress Anissa was very informative and served with a smile. I can’t wait for our Tuesday dinner - will make a review after."

"We booked this stay many months in advance as a 2 night country retreat between city breaks. The welcome email about a week before arrival advised us that their Michelin starred restaurant was fully booked for the duration of our stay. It would have been useful to have known this might be an issue. They did, however, ask us to advise them of our arrival time which we said would be 3pm. We arrived as expected to be told the room would not be available until 4.00, normal check in time. The time we spent hanging around could have been usefully spent being introduced to the estate, but it was not. In the main most staff seemed to have far more interesting things to do than look after guests. When we finally got into the room it was very nice, as was dinner at the beach that evening. During our stay the chateau was very busy preparing for a big weekend. A huge semi permanent marquee was being constructed and the place was overrun with construction workers who used the pool washroom facilities and had lunch in the soft seating areas. The strong feeling was that the guests there at the time were a distant second priority to the upcoming wedding. The marquee construction was in front of the pool and there was zero acknowledgment that some people we’re trying to enjoy a quiet time. There were numerous examples of lack of attention to detail expected of a five star hotel and generally little evidence of management on the ground. At no time over 2 days did anyone come down to the pool area just to make sure everything was ok and at no time did anyone enquire as to whether we we’re having a good stay. Two positive notes to finish on. The barman in the jazz bar was delightful and we were presented with some lovely wine as an apology for the delay in getting into our room. A nice gesture which was thoughtful but not thought through (we are flying back to UK with little spare baggage allowance). Takeaways. The basis for an excellent resort is there but management needs to pay attention to the little things and engage with guests at the time when things go wrong. No doubt the response will be “why didn’t you tell us”. The answer is it’s your job to check. I never normally give bad reviews so I hope this is useful to the hotel and prospective guests."

"It's a hotel for an overnight stay. If you're looking for luxury, this isn't the place for you; it's a hotel for short stays. But if you just need to rest for one night, it's not bad. The buffet is small, but you can manage."

"Privatized moment in family. Great frame, innocuous cleanliness. There is room for being or nothing missing, jacuzzi, swimming pool, hammam, sauna ... Heads, gloves, towels, cream ... all is provided. The most exceptionally a meal provided by our guests, quality, careful and just delicious presentation. Agnes and Tiff are just great guests, both professionally and humanly. The location is in their image, PARFACH! We strongly recommend it. "Make sure you pay attention to the reception working hours. We didn't. We arrived at 9pm and had to stand in a freezing cold outside the closed hotel door for 40 min or so. The hotel's phone numberdid not answer (of course they only pick up the phone during their working hours). There is no security guard or any other hotel staff to let you in when the reception is closed. The lady who answered the hotel's 'emergency' number was very rude. She hung up on us twice before she finally sent the instructions on how to enter the hotel to us. The receptionist who checked us in the next day was nicer. According to her our tour agent did not provide the hotel with our phone number so they couldn't send the instructions to us beforehand. The rooms are old and worn down. The location is great, walking distance from the walled city."
