Aethos Saragano

Our experience at Aethos Saragano exceeded expectations and became the highlight of our trip to Italy. The personal service from all the staff was amazing. We participated in the cooking class with Delphina. She taught us homemade pasta and ragu the Umbrian way. The food was impeccable from breakfast to the wild boar stew and truffle pasta. But the best... nothing can beat the beautiful view.

Tucked in between the beautiful Umbrian hillside towns of Todi and Spello & Assisi, with buccolic countryside drives throughout, Aethos Saragano was another Must agriturismo boutique stay we would choose again. Unique with its tiny stone village-like setting, terrific onsite restaurant (Ceci) and many wonderful areas perched on high (for dinner, breakfast or cocktails) to take in idyllic valley views. Made good use of the beautiful pool situated a charming path walk at the base of the property. They offered pesto-making course didnt take advantage of.

We stayed at Aethos Saragano a week in the lead up to our wedding in Umbria. The entire setting for the hotel is magical, the views are absolutely stunning and the terrace area for dinner, over looking the rolling hills at sun set was just an absolute dream! Communication from the reception was great- they whatsapped us ahead of arrival to check what time we would arrive and gave us plenty of information regarding parking and the restaurant and pool accessibility. We can’t fault the service in any way. The restaurant staff and the house keeping staff were just wonderfully friendly and helpful. We loved that the restaurant had set times for lunch and dinner, it was nice to have this routine during our week stay here and the food was faultless… one of the most incredible meals we have ever experienced was when we ate here for dinner on our first night. The pool area is lovely and relaxing. Yes, a lot of mosquitos but that can’t be helped, just be prepared! The pool was a great way to cool off and relax. We often felt like we had it to ourselves which was lovely. We thoroughly enjoyed our stay here and highly recommend it to anyone wanting a relaxing break from the hectic reality of life… just come here and switch off. It will be worth it!

Where to start… my husband and I stayed at Saragano Aethos for two nights. Since arrival were were greeted by a warm welcome from Paul. He took the time to talk to us and explain in detail everything about the resort. He is fantastic in every way, the heart and soul of Aethos Saragano. He and Delfina made us feel at home and Delfina is an amazing cook. Food at the Ceci restaurant was always perfect and delicious . We loved our stay, the views, the food but mostly Paul and Delfina. Amazing views and charming set up.

Authentic immersive Umbrian experience. Relaxing and engaging. Quiet and peaceful. You feel you’re part of the Saragano village community when you stay there. The views towards the rolling hills are rejuvenating. The apartment suite we stayed has lovely modern interiors. The Ceci restaurant terrace has lovely views to the hills. Delfina , the chef , had all Umbrian food on the menu. Paul had great recommendations on where to go every day. Highly recommend it.

We spent 4 magical nights in Saragano and wish we could stay longer! The food was by far the best we have had in Italy and we made a point to have dinner every night at the restaurant to try as much of Delfina’s cooking as we could! If you have time to set aside for a cooking class with her, do it! She’s such a wonderful person and she truly puts all of her love into her food. We were so impressed by the special care given to us by the woman who got Our room ready for us and also served us lunch one day. I’m not sure I ever got her name because she is an excellent task master and as soon as one thing was off her list she was onto the next! Our evening server in the restaurant, Ali, was the sweetest, most gentle person and took wonderful care of us. This special place has a magnificent landscape, but the real magic of the place lies within the staff that works there. They are led by a manager named Paul, who is a genius in relatable customer service. He creates a vision for each guest that keeps him and his staff on their toes at all times, always trying to do that extra little thing to ensure a unique and memorable experience. We got married during our time is Saragano and although it was only the two of us, we felt like we were surrounded by family because the staff is so wonderful and so loving. Thank you, Paul, for creating such a beautiful wedding for us! We hope to come back again!
