"Resuke" is also called "black conger eel" and lives in the southern seas of Honshu.
It looks like a large eel, but its skin is slimy and it is difficult to cook, so it is a rare fish that is not widely available✨
The bones are removed like conger eel.
I recommend the family sushi restaurant [Japanese-style restaurant Bungo Sushi], which is full of fish from the Bungo Nada Sea.
It comes with sashimi, tempura, simmered dishes, boiled dishes, and even a rice bowl, so it's a "Resuke" full course⭐️
