Fuzhou boasts a rich array of braised dishes. Anywhere with a few warm lamps and a three-foot counter, there's bound to be forty or fifty varieties spread out. Large intestines, chicken feet, beef, pig ears, chicken wings, pig trotters, and so much more are on display, leaving you spoiled for choice. Whether you're grabbing a few to take home with a meal or simply enjoying them with dried rice noodles, they're some of the most soothing Fuzhou cuisine. This shop, located right on the food trail, is said to have opened in the 1980s and, after many twists and turns, landed here. It was fate that I stumbled upon it. Upon entering, I discovered many items were sold out, a testament to their robust business. I'd pick up a few of the remaining intestines, tripe, tendons, and pig trotters, each of which I'd take back to my hotel as a snack. I'd nibble on each piece while slumping on the sofa and watching variety shows, then finish with a pot of hot tea to soothe my burps, brimming with the aroma of the braised food.
