I remember eating it at the Qingjiang Gallery Farmhouse before. Silverfish fried eggs are a bit wasteful. Zhang's Kitchen uses silverfish with meatballs. The silverfish is fresh and tender, like a fairy. The meatballs are mellow and not greasy. With the addition of ham and egg skin, this pot of soup with multiple flavors is hard to leave.
