These flavors, flowing through the veins of the seasons, are etched on Suzhou residents' tables throughout the year, becoming an elegant poem of Suzhou flavor. Yangcheng Lake Caviar Smoked Rice: Delicacies from the lake and sea converge in one place. Charcoal placed over perilla leaves enhances the smoked flavor. Authentic ingredients, inimitable Jiangnan flavor. Suzhou-style Squirrel Mandarin Fish Hot Oil Deep-fried and drizzled with an amber sweet and sour sauce. Crispy on the outside and tender on the inside, with a perfect balance of sweet and sour. This dish showcases the skill of Suzhou cuisine. ~ Suzhou-style smoked fish fillets: Grass carp cut thickly from the middle. First marinate, then deep-fry at high temperature to lock in the juices. Then, dip into the chilled marinade while still hot. ~ Spicy fried eel strips: Stir-fry the eel strips until they curl up. A spoonful of boiling oil is poured over them. Since we were staying nearby with some friends, we decided to go to Wan Li Xuan. I was surprised by how creative this young chef, born in 1996, is when it comes to cooking—especially with the sauce. The prawn and sweet shrimp bases were both perfectly prepared, paired with fresh ingredients for a refreshing and appetizing experience. The braised Boston lobster with sour radish and crystal powder was the best of the bunch; the sourness was just right, and I personally thought a little pickled cabbage would have made it even more satisfying. Of course, a bowl of rice would have been perfect. The soup was a true Cantonese classic, with tangerine peel, fish maw, and white pepper for a flavor boost. The barbecued pork, served on a fat skewers, was surprisingly not greasy at all. The texture felt so familiar, and it was later confirmed that the chef is from Lei Garden. Finally, I have to praise the dessert: the homemade caramel pudding. A thin layer of sugar coated the delicate, snow-like texture of the pudding. Delicious! 😋 Suzhou was still sweltering in late June. As soon as I walked out the door after dinner, I immediately wanted to escape indoors, but when I turned around, I saw the neon lights of Big Pants.
