There are not many traditional local delicacies in the holy land of Yan&#39;an, but the famous one is the mutton soup in Yulin. It was windy and dry these days, and my lips and throat were dry, so I went to Yangzali again, and I needed mutton soup to moisten my throat. This time I tried the plain-looking mutton brain, which tasted nothing special, and paired with mutton soup, it was full of calories.

圣地延安的地方传统美食不多，出名的却是榆林的羊杂汤。这几天风大干燥，唇干喉燥，于是再次去了羊杂李，需要羊汤润喉。这次尝试了卖相朴实的羊脑，口味也无奇异，配上羊汤胡旋，热量满满。

听朋友介绍先去了延安市区的老师家羊杂碎，结果口感中平，而后听了当地人的介绍去了这家不起眼的小店羊杂李，羊头肚汤，油胡旋推荐，门口路边可以停车。

Then I listened to the introduction from the locals and went to this unremarkable little shop. They recommended mutton offal, mutton head and tripe soup, and oil huxuan. Parking is available on the roadside at the door.

The store is adjacent to the train station, with convenient transportation, beautifully decorated dining area, clean and comfortable environment, warm and hospitable cashiers, and a wide variety of fast food on sale, all of which are made on site, fresh and delicious, and reasonably priced.

The restaurant is decorated in a high-end style, clean, spacious, and no one smokes! The service is very good, and they specially marked the taste as light and less salt for us. There are many local specialty noodles and stews. And the portions are very large. Two people ordered 4 noodles and vegetables and packed a lot.

Yan&#39;an is an iconic city in northern Shaanxi and the most significant Chinese revolutionary base. The first time I visited northern Shaanxi, I always had to try the northern Shaanxi cuisine, so I chose Qinxiangyuan. The signature braised fish head with sauce uses large fish heads from Yinghu Lake, served with tofu and chicken feet, which is very tasty. Yan&#39;an date cake is also a very authentic local specialty of Yan&#39;an, fragrant and sweet, but not greasy. The stir-fried yellow beef is really a conscientious product, with a very high proportion of beef. The side dishes in the alfalfa meat in northern Shaanxi are extremely rich, including shredded pork, bean sprouts, fungus, eggs, and day lily, which are absolutely healthy dishes. The cabbage and potatoes are stewed, which is refreshing and filling.

Eight bowls are a specialty of Yan&#39;an, so you must try them. Since I don&#39;t eat beef or mutton, I ordered spare ribs, meatballs, and eight-treasure rice. The spare ribs and meatballs tasted okay, but the meatballs were a little salty; the eight-treasure rice is made of glutinous rice, and it would be even better if it could be made with the local specialty yellow sticky rice.
