Come to the last stop - Guadalajara to end this food tour! Restaurante El Doncel A restaurant with medieval imprints, located in an 18th-century manor in the small town of Sigüenza, Chef Enrique Pérez prepares local seasonal dishes in authentic style. Farm egg yolks, summer truffles or fragrant duck rice with rosemary sauce are enough to start your taste buds journey! Not only can you dine here, but you can also stay in this medieval manor. Recommended price €€€ Restaurante Molino de Alcuneza The restaurant is in a cute and interesting hotel, which was restored in a flour mill built in the 15th century. Surrounded by exquisite wood and stone, the restaurant offers modern cuisine based on tradition, with an emphasis on the delicious seasonal products of the Sierra de Sigüenza, especially mushrooms and vegetables grown in its own organic garden. Recommended price €€€ Restaurante Biosfera As its name suggests, the restaurant reinterprets nature, using modern techniques to enhance the textures, aromas and tastes of its dishes while focusing on the most natural products to create beautiful haute cuisine. In addition to the quality of the dishes, the restaurant is also well lit, with yellow and green velvet chairs, large murals and an original combination of lamps that make dining in this pleasant atmosphere a real pleasure. Recommended price €€€ Cenador de las Monjas The restaurant is located in a historic convent, still retaining 16th-century relics and antiques as decoration. The restaurant offers dishes based on traditional recipes and typical local cuisine, using raw materials from the monastery's own vegetable garden. It also has a rich wine cellar and excellent homemade desserts. You can try pickled quail with lettuce and pickles, apricot quince jelly with cream cheese! Recommended price €€ Restaurant Fardel The restaurant focuses on Guadalajara's cuisine, with many wines from Castilla-La Mancha and small wineries in Guadalajara, which are difficult to taste in other regions. There are also appetizer plates printed with maps of the province and snacks from various regions that are eye-catching. It is recommended to try lamb ravioli, artichokes with pasta, and secret fried croquettes! Recommended price €€ #Spanish Travel #Michelin Restaurant #Castilla La Mancha #Spanish Food

We had a fantastic experience at El Asador Medieval de Sigüenza. The atmosphere is cozy and transports you to another era, with decor that respects the historic charm of the place. The food was excellent: cooked to perfection, authentic flavors, and the migas (breadcrumbs), just right. But what really makes the difference is the service of the staff, which was impeccable from the very first moment. Friendly, attentive, and always smiling, they made us feel right at home. Definitely a place to return to and recommend.

This town is rated as a must-visit town by National Geographic! It is only 1.5 hours' drive from Madrid. 🛡 It is Sigüenza, which has a strong medieval style and is known as the City of Knights (la ciudad del Doncel). The town is located in Guadalajara Province in the Castilla-La Mancha region. Since the Middle Ages, it has been an important strategic territory, and it is also one of the towns with the most complete medieval architecture in Spain. 🏰 Don't miss the Cathedral of Sigüenza (Catedral de Sigüenza, Figures 4-6), which houses the "Annunciation" by the painter El Greco, and there are actually two Michelin restaurants "hidden" here, El Doncel Restaurant (Figure 8) and El Molino de Alcuneza Restaurant (Figure 9). Remember to come here next time you come to Madrid! #SpainTravel #BeautifulSpain #Castilla-LaMancha #SpanishFood
