The waiters were really attentive and explained the details of each dish clearly and fluently in English. This was a great meal and a great value lunch that deserves the title of a 2 Michelin star restaurant.

Edition Koji Shimomura is located at 3-1-11F Roppongi T-Cube Bldg. 106-0032, Roppongi, Minato-ku, Tokyo. The hotel we stayed in Tokyo was Hisakazu Okura, so we chose the nearby Michelin two-star restaurant Edition. The chef and founder, Hiroshi Shimomura, studied in France. After returning to Japan, he opened Edition and won two Michelin stars. He is very business-minded. He has cooperated with hotels in Thailand and Singapore for stationing tours. When he heard that we were from Taiwan, he also wanted to go to Taiwan. The prices are as follows, all in Japanese yen. Lunch is more affordable, with three price ranges of 6000/ 9000/ 13000. Dinner is: 13000/15000/20000. This time we tried the 6000 & 9000 set menus. EDITION is located in an office building, and the overall style is bright and simple.

The appetizers were very delicately presented, with bright colors, making people feel that the opening was such a gorgeous enjoyment! The appetizer was jelly oysters, fresh and juicy oysters with fresh and unique jelly, a touching moment never seen before! Chef Koji Shimomura (Hiroshi Shimomura) returned from France and used the essence of French cooking to cook Japanese ingredients. The overall style of the restaurant is also a mixed form. The waiters are dressed in suits and the tables and chairs are Western-style but reveal the minimalist aesthetics of Japanese style. Koji Shimomura also advocates Japanese minimalism. His dishes are based on modern contempt. Cream and butter are rarely used, but lemon and lime appear frequently as seasonings. The restaurant is located on the first floor of an office building in Roppongi 1-chome. Exit 1 of the Roppongi 1-chome subway station and find the T-Cube Building. The restaurant is just one of the entrances. The waiters were very welcoming and reservations can be made on the official website, which is very convenient. The lunch I chose has a menu of Dessin Sketch, Tentatuon Temptation, Voyage Brigade and Découverte Discovery, with prices of 6,000 yen, 9,000 yen, 13,000 yen and 20,000 yen respectively. I chose Voyage Brigade, 10 dishes. Eating in Japan requires tax and service fees, plus drinks are also an expense, and the average per capita cost is about 20,000 yen. After entering the store, the waiter repeatedly confirmed if I had anything I didn't want to eat. It turned out to be their signature dish, oyster mousse. Many people don't eat oysters, but this is their most popular dish. In fact, I don't like oysters, but the oysters here are blanched in water, not so raw and cold, but paired with lemon jelly, it is really sour, and I didn't like this dish. The whole dining process is full of fun. The chef has a lot of creativity, such as seasonings that change color, cookies in purple corn kernels, and foam mousse in a mysterious container. After finishing the meal, I felt that the chef really likes sour food, and basically every dish has sour elements. I chatted with the chef before saying goodbye. He was very nice. He said he studied in France for eight years and worked in one-star, two-star and three-star restaurants. He asked me to send him photos after returning home. Friends who like fresh French food can try it.
