Business still has to be done in the city, where there are many people and consumption is also popular. There are many stores that are more than ten years old. The Hot Chicken Head King in Jinxiu is located at the T-junction of Jinxiu Road and Jinshi Road. Although it is located under a residential building, it is rare to have free parking spaces. The decoration in the store is the kind of decoration with a sense of age, which is well maintained and not dilapidated at all. The boss and the waitress in the store are very good. They greet you warmly as soon as you enter the door. This kind of store opened in the community has a sense of life. The customers are all familiar customers, and it feels like eating at a friend's house. The environment is adequate, the service is good, the dishes are excellent, and the portions are large. After we sat down, we were served chrysanthemum tea, followed by a cold dish of bitter chrysanthemum, preserved egg, and peanuts. I was surprised when it came out. I've had this noodle shop in my collection for a long time, and I stopped by whenever I was nearby doing some work. The shop is located in an alley between the Liaoliang Building and the Textile Building, on the first floor of a residential building. Parking is naturally difficult in this area, but they actually have a dedicated parking space right in front of it, which is quite rare. The shop isn't big, with two suites inside and outside, each with four small tables. The tables aren't large, but there's plenty of space between them, so it's not cramped, which is quite nice. There's a chef and a waiter, both with Shanxi accents, making this a truly authentic Shanxi noodle shop. I ordered oil-splashed noodles and beef knife-cut noodles, and they were served very quickly—very quickly, almost as soon as I sat down. The speed of service must be praised. The beef sliced noodles are topped with braised beef, which is prepared in advance. The braised beef is about five or six pieces, and the price is 17 yuan. While the amount of meat is acceptable, the topping is quite spicy, and it's likely unavoidable. It's also quite salty, so those with a spicy or bland palate should beware. The oil-splashed noodles are also sliced noodles, with bean sprouts, scallions, and greens added. Simply pour hot oil over the chili noodles, and you're done. This method is incredibly delicious, but don't rush to mix it; it can be quite salty. This is a pretty authentic place, and the sliced noodles are excellent, springy and smooth. There are two issues: the noodles are a bit hard, and they're a bit salty. If you're bothered, please let the owner know in advance.
