Maria generously opened her own home and kitchen to my husband and I for this hands-on cooking experience. We learned how to choose green plantains and make cheese stuffed empanadas, which are delicious and healthy - a real game changer if you want to avoid gluten or typical wheat flour doughs. Pressing the empanadas was fun - we have already ordered a tortilla press for our home use and will make this recipe frequently.
We also made fresh shrimp ceviche and learned that Ecuadorians cook the shrimp first. Many of the ingredients came from Maria's own backyard, which is an amazing array of fruit trees (50 foot avocado trees!) and herbs. The lemon verbena lemonade was amazing!
We had Maria arrange a private ride for us from the Wyndham Quito Airport hotel for a very reasonable extra fee. I highly suggest this, as she lives in a gated community and our driver knew how to get in. The drive was beautiful and interesting - especially the neighboring town with all the guinea pigs hanging on the street. We did not eat any of these, but wow are they huge!★

Pros: we absolutely loved this tour. Diana, our guide was amazing, welcoming, friendly, answered questions, and was accommodating with stops for the bathrooms, coffee, and just to take photos. And of course hiking Cotopaxi was incredible. Plus the lunch was to die for. (And good vegetarian options!)
Cons: the agenda listed horseback riding, hiking, and lunch. About 2hrs in we asked when we would be horseback riding and were told actually this tour had none! Not sure if we were put on the wrong tour or if this was just a change of plans, and we were more excited about hiking anyhow, BUT! If you desperately want to horseback ride, triple check. 🤣★

I thoroughly enjoyed the whole day. Hugo made it very special - although we had a lot to get through, I never felt rushed. Hugo has over 20 years experience doing this and it showed. Each of the three events left a huge smile on my face. Hugo‘s knowledge of Quito, history, geology and generally all things South American was most informative and engaging. I cannot recommend this tour enough, especially if you’ve got limited time in Quito. I have been travelling through Latam for almost 3 months and this was certainly amongst the best tours. ★

This tour was absolutely the highlight of our trip. Gabriel was our guide for a fabulous tour of the cloud forest in Mindo with incredible bird sightings. After picking us up early in the morning from our hotel, we headed to the cloud forest. Along the way we stopped at several different spots to see vast numbers of bird species. Gabriel was an expert in identifying the different birds for us. The shear number of different hummingbirds and tangiers that we saw was unbelievable. We also took a cable ride across the Mindo valley for spectacular views followed by a nice hike to a beautiful waterfall with many more bird sightings along the way. We had a most delicious lunch at a local restaurant. We then headed in search of the Andean Cock of the Rock and were able to see several in a remote area. This was such an awesome experience. Gabriel took such great care of us and made sure we had plenty of time for photography. If you love birdwatching and/or bird photography, then this tour is a must with the best guide ever, Gabriel.
