Food was amazing, we took My roots 8 dishes menu, and the majority of them was great. But unfortunately dishes were coming with very long breaks. Instead of 120 minutes our experience lasted at least 3 hours and a half. By the time of desert we were too tired to appreciate it fully. Also wine pairing arrived later than some dishes and few choices of sommelier were a bit questionable. Generally very nice restaurant and worth the visit but have some room for improvement.
The cooking that I was particular about is offered, but there is a thing lacking umami taste. In addition, the bread is too hard.

The restaurant is part of the structure that makes up the Hotel Royal Paestum, therefore easy to access and has a large internal parking lot. The decor and the arrangement of the tables are sublime, large spaces and taste in creating the right atmosphere. The staff is particularly kind and prepared, as you would expect from a starred restaurant. The wine list surprised me, it is incredibly vast, enough to satisfy any connoisseur, both of Italian and foreign wines. I opted for one of the two tasting menus present, which unfortunately did not completely meet my personal taste. This is not intended to be a criticism of the chef: the raw materials are excellent and combined according to his vision of cooking, perhaps I started with a different expectation. Having followed the Chef's path, I would have expected a more traditional and recognizable cuisine, instead it turned out to be much more "pushed" than I imagined, this is my "limit", since I love delicate flavors. I think it deserves a second (and third) chance, to fully understand the potential of the dishes, perhaps opting for a different menu. The price is absolutely in line with the type of restaurant.
