Bon Profit Cocentaina

L&rsquo;escaleta clearly deserves the 2 stars. I liked how chef Kiko uses local products but goes well beyond the classical Valencian dishes. The chef&rsquo;s menu &lsquo; sabor&rsquo; , while being the smallest of the two menus offered, will already take you 3 hours to enjoy. Each dish gave me a nice blend of sour, salt and spice - chef Kiko likes to use kimchi, wild mustard and preserved vegetables, fish and meat.The service was very hospitable, and concluded by an invitation by the chef to visit his spotless, well organised kitchen.As the adagio of Michelin says: two stars means worth a detour and I would say, don&rsquo;t mind if that detour takes you well off your planned road.
