Coldstream Hills was founded in 1985 by the Halliday couple, James and Suzanne. Due to the economic depression, Coldstream Hills was sold and James Halliday withdrew from the business, but he still lived in the house in the winery and continued to play a consulting role in the winery, which also had a significant impact on the style of its wines. Today, the winery has gradually become a representative of small wineries in Australia from the initial 450 boxes of wine produced. The wines here are sold to 16 countries, and its popularity is very disproportionate to the size of the winery.

In the cool and beautiful Yarra Valley, the dense vineyards of Coldstream Hills Winery have become a landmark here. The wines produced here are unique, mainly because Chardonnay and Pinot Noir are affected by the cool climate. The Yarra Valley is cooler than Bordeaux in France, but warmer than Burgundy. Coldstream Hills Winery is very happy to accept the addition of individual styles in the winemaking process, and has developed a project for guests to make their own wine, which is popular with many tourists.

Among the wines under Coldstream Hills Winery, Chardonnay and Pinot Noir are the most popular, especially &quot;Reserve Pinot Noir&quot;, which has been recognized as the representative of Yarra Valley style Pinot Noir since it was launched. The Reserve series is made from the best Pinot Noir in the vineyard, exuding unrestrained cherry, plum and rich berry aromas in the glass, layered taste and ever-changing flavors, with moderate tannins and acidity, making the sweet fruit flavor more pleasing and elegant. The overall structure is very balanced, and it is indeed a rare high-quality Pinot Noir wine in Australia.
