Lupis, Sweet Sticky Rice With Brown Sugar

Lupis, also known as lopis, is an Indonesian traditional sweet cake made of glutinous rice, banana leaves, coconut, and brown sugar sauce. It is one of many glutinous rice desserts from Indonesia. Lupis are sometimes cylindrically shaped like Lontong. Lupis is usually eaten with thick palm sugar syrup and with shredded coconut toppings. To make lupis, glutinous rice is first soaked in water, salt, and lime juice. After draining the water, the soaked glutinous rice is moved onto banana leaves in single serving size portions to be wrapped for shaping. The wrapped rice triangles are then put aside for the creation of the syrup condiment. Coconut sugar is dissolved in water and brought to a boil and left to thicken. Grated coconut is then sprinkled on top of the unwrapped lupis and drizzled with coconut sugar syrup to be served. Lupis is a popular food found nationwide in Indonesia, but especially in middle and eastern Java as well as West Sumatra. It is often eaten at breakfast or as a side dish during the evening. Here is a more detailed recipe for lupis: Ingredients: * 300 grams glutinous rice * 1/2 teaspoon salt * 1 teaspoon pandan essence (optional) * 100 grams grated coconut, for topping * 150 grams brown sugar, for sauce * 100 ml water * 1/2 teaspoon salt Instructions: 1. Rinse the glutinous rice in cold water until the water runs clear. 2. Soak the rice in water for at least 3 hours, or overnight. 3. Drain the rice and add the salt and pandan essence (if using). 4. Spread a banana leaf on a flat surface. 5. Take a handful of rice and shape it into a log about 2 inches long and 1 inch thick. 6. Wrap the rice log in the banana leaf. 7. Repeat steps 5 and 6 until all the rice is used. 8. Steam the lupis in a steamer for 30 minutes, or until cooked through. 9. While the lupis is steaming, make the sauce. 10. In a saucepan, combine the brown sugar, water, and salt. 11. Bring to a boil over medium heat, stirring occasionally. 12. Reduce heat and simmer for 10 minutes, or until the sauce thickens. 13. Remove the lupis from the steamer and let cool slightly. 14. Unwrap the lupis and top with grated coconut and brown sugar sauce. 15. Serve immediately. Lupis is a delicious and sweet treat that is perfect for any occasion. It is also a relatively easy dish to make, so you can easily enjoy it at home. #food
