The pickled bamboo shoots at this snail rice noodle shop have such an authentic flavor; you can smell that familiar "stinky" aroma as soon as you walk in. The broth is rich and flavorful, and the noodles are cooked perfectly with a chewy texture. I recommend adding a fried egg; it's absolutely delicious soaked in the broth.
The broth was indeed flavorful, you could taste it was made from bones, and it wasn't greasy. The fermented flavor of the pickled bamboo shoots was authentic, similar to what I've had in Guangxi. The texture of the rice noodles was key; they were cooked just right, chewy but not mushy. I recommend not soaking them for too long, and eating them as soon as they're served.
The owner was incredibly friendly, patiently explaining the characteristics of each dish when we ordered, and even proactively reminding us that the portions might be large. This feeling of being taken care of made us very relaxed, as comfortable as visiting a friend's house.
