Jincheng Mianpian Di Yichao

We watched the shop owner roll the noodles, cut them into long thin pieces, and then stewed them for a while. They were pure but not bland, even but not thin, sticky but not stagnant. No oil or even vinegar was added. There was no raw material processed by humans. The lifelong hobby was natural. Serve a bowl, and then add vinegar, chives, and chili according to your own taste. Pick up the noodles, and drink them hot from the edge of the bowl. The night breeze was blowing, and the sky was full of stars. I was the only one who was not a god.

Fried noodles are one of the most distinctive snacks in Lanzhou, so you must try it. This one in Dazhong Lane is said to have a long history. It tastes really good and is quite affordable. Recommended

Lanzhou's noodles are truly excellent, boasting a wide variety of flavors. Jincheng Noodles First Chao, tucked away in Dazhong Alley, is a prime example. The small, thin slices of mutton noodles are incredibly rich, complemented by a side of homemade salted chives and bite-sized garlic cloves—they're simply delicious.

Located in Dazhong Lane, it's quite famous in Lanzhou. I ate a bowl of mutton soup noodles and then had two ounces of beef shank. To be honest, the taste wasn't particularly amazing, but it was alright. However, the portion was quite large.

Noodles are a specialty of Northwest China, and you won’t find this flavor anywhere else. The shop is not big, but the noodles are generous in size and there are many people eating there.
