The crispy duck noodles from Shangfang, located on Dongzhuanbang Road near Jiangsu Road Metro Station, are a dish I've been craving for a while. This delicacy originates from the Su family's crispy duck noodles in Xinshi Ancient Town, Deqing County, Huzhou, and has been passed down for generations. These noodles, also known as duck-stirred noodles (tied with string to prevent them from falling apart during prolonged stewing), along with Xinshi mutton, are local must-try delicacies. I'm hoping to savor them once I get a chance to visit Xinshi Ancient Town. For the noodles, I chose the lard-mixed noodles. The aroma of lard was so fragrant from afar that it made my mouth water. The white noodles, adorned with a hint of green onion, evoked the charm of the Jiangnan water towns. Once mixed well, the rich sauce and lard flavors were irresistible. For the crispy duck, I chose the duck wings, which were more tender and fragrant. The duck pieces were a bit dry, and the gizzards were too small, so I opted for the duck wings. Carefully pull off the string, and the wings are already tender and tender. Savoring them slowly, the aftertaste is comparable to Kong Yiji enjoying fennel beans. The duck soup is a bit salty, but incredibly delicious. After finishing the wings, I had another bowl of soup.
