It is a traditional Edomae sushi restaurant. Chef Shinji Kanesaka and his apprentices attach importance to Edomae sushi techniques and adopt new concepts to pursue deliciousness. They follow traditions and give priority to the freshness and maturity of ingredients. The taste is super good, and there are very few seats. I have been to Tokyo so many times and I am ready to eat at all the sushi restaurants one by one. This one is really good and recommended.
The wine dish was a hazelnut tofu. The homemade tofu had the aroma of hazelnuts, and the taste was between mousse and tofu. It tasted pretty good. But I personally think that as the first wine dish, it might be a bit too rich The sushi was quite good and stable, but the size of the sushi was a bit too big for me and not easy to eat. The sashimi was a bit too thick and didn't look like a whole with the shrine. Except for the two mackerels, which had a bit of fishy smell, the other sashimi tasted light (personal guess: it might be related to the aging time and the overall quality of the fish not being very good) I think for this price, the quality is already very high, and the cost performance is very high. But if you are not looking for cost performance and are not so into omakase, I personally don't recommend it.
This restaurant is located in Ginza, so it's always packed with customers. The horse meat sashimi is very authentic, and the horse meat sushi is also delicious. The fish is also top-notch, but it's a bit pricey in Ginza.
The seafood at his restaurant is quite delicious, especially his seafood sushi, which I really can't resist. I especially envy his shrimp sushi.
