[Owner] The owner of Sushi Marufuku is Yutaka Isayama. His hometown is a long-established sushi restaurant in Tokyo and Higashi Nagasaki that has been in business for 50 years. He grew up in a sushi atmosphere since he was a child. He himself has 25 years of experience in sushi restaurants in Tokyo. In October 2011, he inherited the name of his hometown restaurant and opened Sushi Marufuku in Nishiogikubo, Tokyo.

1. First of all, we carefully select the origin of the fish. For example, the white fish is purchased from a famous fish shop in the Goto Islands, and the sea urchin comes from the collection of Hokkaido fishermen. Afterwards, the catch is marinated with salt and vinegar to mature it according to its size and fat content. For example, light fish such as shad are usually cooked 2-3 days after being preserved, but this shop lets them sit for at least 5 days, using a longer period of time to mature them so that the taste of vinegar and salt is no longer noticeable, leaving only the delicious taste of the fish.
2. All white fish are matured. Brown grouper will be matured for more than 20 days. Depending on the type of fish, some will be left for up to one and a half months.
3. The shari in the store is also very particular. The sushi rice is a mixture of two kinds of rice, Akita and Niigata, and the vinegar is mainly red vinegar, mixed with four kinds of ingredients. When the meal begins, the first thing to come out is the mature white fish, followed by light fish, and in the second half, the stronger-flavored fish and shellfish will be served.
