This is a little town located in the port area of Kanazawa City in Ishikawa Prefecture that is dedicated to soy sauce making and miso paradise.

A video made by Insider Business talked about "Why Only One Percent Of Japan's Soy Sauce Is Made This Way" and this place is one of the best places to enjoy everything related to the process of making soy sauce, miso, and koji! The park offers tours where they explain the process of making their most well-known products. There's also a restaurant where you can try local dishes made with koji, in all its forms. You can also try the best-selling soy sauce and amazake flavored soft cream, cheesecakes made using the same fermentation process as the soy sauce brewery, and so much more!
I personally highly recommend visiting this park if you're in the area. I've been here many times and I still can't get enough of the soft cream and cheesecake. Also, I think it's very important to support businesses that are working hard on preserving old traditions.
