I have been coming to this one star sushi place for several years. Chef Hirose never stops to amaze me. Yes he serves his excellent sushi the classical way using the original akazu vinegar to give the rice a richer flavor. Unlike many stern faced sushi chefs, Hirose will explain to you the various type of food you are eating and why they taste different in different seasons (his English is limited). You can take your time to savor the food. He dares to experiment and at one time has even an Italian chef working for him. The food is not only great but the dinner very enlightening. The place is hard to find even by locals. It is located in a small alley next to the No. 5 exit of the Minamimorimachi Station (taxi driver always drop you off at the wrong place).
