Suzhou's summer speciality: "Fan-powered cold noodles"!

We went to try the summer-only Suzhou gourmet dish "Feng Fan Liang Mian." "Feng Fan" means a fan, and "Liang Mian" means cold noodles. As the name suggests, "Feng Fan Liang Mian" is made by cooling boiled flat noodles under the wind of a fan. Since it is not cooled with water, there is no smooth texture, and it is dry and chewy lol. But for some reason, this texture is addictive. It is a noodle shop of "Song He Lou", a long-established Suzhou cuisine restaurant with over 250 years of history, so the taste is as expected, refined. I was happy that it comes with an egg by default. The restaurant is located in the historic shopping district "Guanqian Street" in the old town of Suzhou, and was crowded with tourists.
