A-Tsai Vegetable Lamb Hot Pot

Among the various vegetable lamb hot pots in Taipei, A-Tsai definitely stands out. Just look at those enticing red and white lamb slices! Today, we chose choy sum as the base for the broth, and later added some mustard greens for extra flavor. The lamb with skin pairs perfectly with the choy sum, creating a fresh and non-greasy broth that's truly delicious. The lamb with skin needs to be simmered in the pot for a while to become tender. I only blanch the fresh lamb slices until they turn pink, about 80% cooked, then take them out. At this point, the lamb is especially tender. A slight dip in fermented tofu sauce enhances the flavor.
