Virtually every visitor to Xiamen makes a point of visiting Bashi Market, and locals are no exception! As the most popular food market in Xiamen, it attracts tens of thousands of people daily. Locals come for their daily necessities, while tourists are on the hunt for delectable cuisine! Naturally, I too am drawn to the culinary delights found here, such as hand-shredded chicken, taro dumplings, egg bread, five-spice rolls, and satay noodles, to name a few. Today, I am indulging in my favorite satay noodles, a dish that has been perfected over 38 years by generations of skilled cooks. The friendly aunties who run the shop always offer a warm welcome. 🍜 Gong Tang Satay Noodles is located on the left-hand side of the entrance to Bashi Market on Kaiyuan Road. The entire row of buildings is of the traditional arcade style, with JiZhi Department Store directly opposite. The shop's decor is simple, and I noticed a group photo on the wall, a memento from when a film crew shot a scene here with the owner. 🎬 Upon entering, you're greeted by a refrigerator brimming with fresh ingredients, mostly sourced from the market that very day. The freshness of the squid, clams, sandworms, oysters, prawns, and various pork offal is evident. You can mix and match to your heart's content, ordering as many delicious ingredients as you wish! The ordering process is straightforward: simply choose your ingredients for the satay noodles from the refrigerator. As an offal enthusiast, I always add large intestines and pork liver, and I'm also fond of the chewy tendons. Add some sandworms and clams for an extra burst of freshness! Once the ingredients are blanched, they're served over alkaline noodles and topped with a spoonful of rich satay soup. It's truly "awesome"! 👍 Of course, besides the delicious satay noodles, don't miss out on the other snacks! Today, I discovered that they've introduced a new item! The freshly fried five-spice rolls are large and meaty, with a perfect balance of lean and fatty meat. Paired with Xiamen chili sauce, they have an authentic Xiamen flavor! The addition of onions adds a hint of sweetness, which is quite delightful. 🌯 Their hand-shredded chicken is another favorite of mine that I often take home to serve as a dish at dinner. Made with free-range chicken, the meat is tender and the skin is springy. The addition of sesame oil and sesame seeds during the mixing process elevates the flavor and texture of the chicken, making it the first dish to be finished every time! 🍗 Whenever I order oyster omelette, the kitchen is filled with a "sizzling" sound. This dish requires a generous amount of oil and high heat. It's a staple on Xiamen dining tables, featuring fresh oysters, local sweet potato starch, and green garlic sprouts, topped with an egg. The soft and chewy texture is reminiscent of home cooking. 🍳 The steamed crab roe soup dumplings are packed with the aroma of crab meat, and the soup is incredibly fresh. You can eat them as is or dip them in sauce for a different flavor. 🥟 The crispy fried taro and duck is filled with a generous amount of taro, paired with duck meat. The combination of sweet and salty flavors is quite novel. The outer layer is crispy, which I absolutely love! If you're a taro fan, don't miss this dish, and also try the Taro Bag King. The soft and glutinous taro bag is filled with a stuffing made from chopped mushrooms, minced pork, and bamboo shoots. The flavor is savory and the texture is pleasing. 🦆 With skills passed down through generations, Gong Tang Satay Noodles is a great choice if you're looking for authentic Minnan flavors in Xiamen! 🍜
