One of the specialties of Inner Mongolia is definitely lamb. You can find lamb everywhere — lamb shumai, roasted lamb, lamb skewers, lamb hot pot… 🐑 The lamb here is surprisingly sweet and aromatic, with a unique flavor that I’ve never experienced elsewhere. It doesn’t have that bland or overly “gamey” smell that lamb sometimes has. But the most special one has to be ICE-COOKED LAMB. 🧊🐑 The ice is added to the pot together with the lamb. As the ice slowly melts, the lamb gradually heats up and eventually cooks in the melted water, together with aromatic herbs and seasonings. The result is incredibly tender and juicy lamb that keeps its natural sweetness and flavor.
